Hello from California!
I’ve been in the glorious Sunshine State for 9 days so far. This is my first time to ever visit California and it has been amazing to say the least. I’ve been exploring all over the LA/Orange County area.
I came here the first week with the Antioch Discipleship School (my day job) students for our fall outreach.
Unfortunately, I badly hurt my Achilles tendon the day before we left with my 18 mile run, so although I had some ideal running plans for the trip, I was mostly stuck doing this.
It was really discouraging having to stay away from running. It’s crazy how much you realize you love something when you can’t do it anymore. I got in a few other workouts, but nothing compares to running.
But I still got some good workouts in. This was one of them:
I also did some hot yoga later in the week at a local yoga studio called Purple Yoga. It was so fun and refreshing!
I got to stay at our friends house, which was perfectly peaceful and made for some glorious mornings with coffee and delicious breakfasts. At the beginning of the week we bought some groceries from Sprouts and were able to make our own breakfasts for the week. When you are eating out every other meal, getting to make your own breakfast was the bomb.
Some breakfasts I made:
Do you see a theme here? Lots of eggs and avocado and veggies. Can’t go wrong with that!
We ate some yummy things while out and about too.
I had to eat some In-N-Out burger while in Cali…duh. Protein style!
Confession- I went to this next burger place twice in the week I was in Fullerton. Burger Parlor’s burgers are amazing and so creative. They also use grass-fed hormone-free meats in all their patties. I got their “OC” burger, which was a turkey burger topped with crushed avocado, sprouts, marinated carrots, and some pesto/herb sauce. Side of sweet potato fries!
After hot yoga on Monday I walked across the street to Green Bliss Cafe and got a vegan/gluten free treat- Salted Caramel Sweet Potato Chocolate Torte. Divine! They make their own almond milk so I had an iced coffee with some almond milk to try.
Other places I ate were Rubio’s, The Habit burger grill, Red Brick pizza (got a delicious gluten AND dairy free pizza!), Jersey Mike’s, Wahoo’s fish tacos, a Lebanese restaurant that I don’t remember the name of, and possibly some other restaurants that I don’t remember right now!
I wasn’t very good at taking pictures of those, but some of my favorites were that gf/df pizza that had some pepperoni, proscuitto, basil, and garlic on top. I also went to Rubio’s twice because their salads were phenomenal and fresh! And my salmon salad from Wahoo’s was so flavorful and delicious as well!
My last night in Fullerton, all I wanted to do was eat a home-cooked meal after eating out so much. I went to Sprouts and purchased a purple sweet potato and a little persimmons. My first time to try both, and they were delicious!
I’m in Newport Beach with my husband and let me just say…we’ve had some MAJOR foodie adventures that I can’t wait to share with you guys once I head back home. I’ve been better about taking pictures since being here, too.
In the meantime you guys can be praying for me…I came down with a mighty cold the past couple of days and feel pretty crummy. I haven’t been sick in a very long time. I think with having to rest a lot more for my Achilles, my body has slowed down and you know…when it rains, it pours. :)
Be inspired (California style),
Alexa
